Homemade Krispy Kremes

 INGREDIENTS:

° three tablespoons milk

° 3 teaspoons boiling water

° 1 teaspoon dry yeast

° eight ounces flour (just under 2 cups, I recommend

° 1 1/2 ounces sugar

°1 egg

° 1 ounce butter cooled to room temperature

°1 pinch salt

°oil

°glaze

°1/3 cup butter

°2 teaspoons candy

°1 1/2 teaspoon vanilla

°4 teaspoons warm water

 PREPARATION:

In a measuring cup mix the milk with the boiling water. Add a teaspoon of sugar and the yeast. Mix gently and set aside in a warm place until the yeast (also called foam) activates

In a bowl, mix the flour, finally the sugar and the salt.Using your hands or a stand mixer, grind the butter until it looks like breadcrumbs. Add the  eggs (and beat quickly) and yeast mixture to the flour  and mix until smooth. Mixing usually takes about five minutes.

Place the dough on a lightly floured work surface and knead for five to ten minutes. You should feel the elasticity and shape of the bubbles beneath the surface. Put it back in the bowl, cover with a cloth or plastic wrap, and let rise until doubled in volume, about an hour.

After cooking, place the dough on the work surface and divide into four parts. Tie one piece at a time into a tight string about 1 to 1 inch (2.5 to 2.5 centimeters) wide. Cut into strips about 1 inch long, lift the ball up with your hands and place on a baking sheet or wire rack to rest.

Cover the holes with  material so they rise when the oil heats to 375 degrees F.

Place the rolls in the oil and fry  for 2 minutes on each side until golden brown. Note that it’s best to  fry them piece by piece so  they don’t pile up and stick together.

Drain on a paper towel or drizzle onto a cloth before glazing. Make sure you buff them or they might not get good opacity!
