Cheesy  Stuffed Potato Cakes

INGREDIENTS :
2 large potatoes, peeled and boiled
1 cup shredded cheddar cheese
1/4 cup chopped green onions
1/4 cup chopped cooked bacon
1/4 cup sour cream
Salt and pepper, to taste
1/2 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Vegetable oil, for frying

Preparation Steps

Mash Potatoes:

In a mixing bowl, mash the boiled potatoes until smooth.

Mix Ingredients:

Add 1 cup shredded cheddar cheese, 1/4 cup chopped green onions, 1/4 cup chopped cooked bacon, 1/4 cup sour cream, salt, and pepper to the mashed potatoes.

Mix well until all ingredients are thoroughly combined.

Shape Patties:

Scoop about 2 tablespoons of the potato mixture and shape it into a patty.

Repeat with the remaining mixture to form multiple patties.

Coat Patties:

Dredge each patty in 1/2 cup all-purpose flour, dip in the 2 beaten eggs, and coat with 1 cup breadcrumbs.

Cooking Steps

Heat Oil:

Heat vegetable oil in a skillet over medium heat.

Fry Patties:

Fry each patty until golden brown, about 3-4 minutes per side.

Drain Patties:

Drain the fried patties on paper towels to remove excess oil.

Serving

Serve Hot:
