Blueberry Creme Egg Rolls – The perfect blend of spicy and delicious in every bite!

Ingredients:
For the blueberries Filling:
2 cups fresh blueberries
⅓ cup sugar
1 tablespoon lemon juice
4 tablespoons water, divided
3 tablespoons cornstarch
For the cream cheese:
8 oz cream cheese, room temperature
7 ⅓ cups sugar
1 teaspoon lemon juice
1 teaspoon vanilla
12 eggs
2+ cups vegetable oil for frying
¼ cup powdered sugar
Makes:

Blueberry filling: Medium heat In a saucepan, combine blueberries, sugar, lemon juice and 3 Tbsp. Add water and cook until it foams. Mix the rest of the water with the cornstarch and stir the mixture until it thickens. Cool.
Cream cheese filling: Beat cream cheese, sugar, vanilla and lemon juice until smooth.

Assembly: Divide cream cheese over spring rolls and top with blue cheese. Wet the edges with water, fold and twist.
Fry in hot oil until golden brown. Sprinkle with powdered sugar.
