Amish Apple Donut Bread Recipe

My Amish friend shared this bread recipe with us and we’ve been using it ever since!

Ingredients 

1/3 cup light brown sugar

2 teaspoons ground cinnamon

2 large apples, peeled, cored and diced

2/3 cup white sugar

1/2 cup uncooked butter Salt, softened

2 eggs, at room temperature

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk

For the glaze:

1/2 cups powdered sugar

2- 3 tablespoons milk or cream

Preparation:

Preheat the oven to 350°F (175°C). Grease or line a 9 x 5 inch loaf pan.
Mix the brown sugar and 1 teaspoon of cinnamon in a bowl.Brush diced apples with this mixture; put aside.

Beat white sugar and butter until fluffy. Add the eggs one at a time and then the vanilla.

Sift flour and yeast together. Gradually add to the cream mixture, alternating with the milk.Pour half of the batter into the pan. Add half of the apple mixture and pat in lightly. Top with remaining dough and apples.

Bake for 50-60 minutes. Allow to cool slightly before icing.For the glaze, mix the powdered sugar with milk or cream to the desired consistency and drizzle over the bread.

Variations and tips:

For extra crunch, mix chopped walnuts or pecans with the apples.
Replace the milk with cream for a richer bread.
Add applesauce to the dough to add moisture.
Enrich the spice mixture with nutmeg or allspice.Canned apples can also be used out of season. However, fresh apples are recommended for best results.
