BAKED CHICKEN CAPRESE

 Ingredients

Chicken Marinade:

2 chicken breasts, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Tomatoes –

Cherry tomatoes, halved or quartered

1 tablespoon olive oil

Fresh basil leaves, chopped

Salt and Pepper

 Dressing:

Basil Pesto

Mozzarella Slices

Method:

Chicken Marinade –

In a small bowl, combine  olive oil, onion powder, garlic powder, Italian seasoning, salt and pepper. .

Using a meat mallet, flatten the thick part of the breasts. Brush  breasts with  chicken marinade.

Mix the tomatoes with olive oil and chopped basil and season with salt and pepper.

 Chicken and Assembly –

Heat 2 tablespoons of butter in a pan, brown the chicken on both sides (it is not necessary to cook it through as it will continue to cook in the oven) and place in a baking dish lined with baking paper. Top each chicken with mozzarella slices and bake in the oven at 200°C for about 20 minutes or until the chicken is cooked through.The baking time may vary depending on the thickness of the chicken breast.

Remove from oven. Top each chicken with about 3 tablespoons of pesto, a tablespoon of tomatoes, and some freshly ground pepper. Serve immediately.
