Ingredients:

12 large eggs

2 cups low-fat milk

1 cup heavy cream

1 cup diced ham

2 cups chopped fresh spinach

8 cups sweet Hawaiian bread, diced

2 cups hash browns, shredded (frozen)

1/4 cup green onions, chopped

2 cups cheese blend (cheddar and Colby Jack), grated

Instructions:

Heat the oven Preheat to 200 °C and generously grease a Bundt cake tin.
Saute spinach in olive oil until wilted. Add the minced garlic and set aside.

Fry the potato croquettes in another pan until they turn slightly golden brown. Avoid heat.Assemble your bundt: first half the bread cubes, then the ham, green onions, spinach, hash browns and half the cheese. Finish with the remaining bread cubes.
