Baked Oatmeal with Fruits and Nuts
Ingredients:

2 cups rolled oats
1 1/2 cups milk (dairy or non-dairy)
1/4 cup maple syrup (or honey)
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup mixed berries (such as blueberries, strawberries, raspberries)
1/2 cup nuts (such as almonds, walnuts, or pecans), chopped
1/4 cup raisins or dried cranberries (optional)
1 tablespoon chia seeds or ground flax seeds (optional)
1 tablespoon melted coconut oil or butter (for greasing the pan)
Instructions:

Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with coconut oil or butter.
Prepare the Oats Mixture:
In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, baking powder, and salt.
Add Dry Ingredients:
Stir in the rolled oats, chia seeds or flax seeds (if using), and nuts. Let the mixture sit for about 5 minutes to allow the oats to soak up some of the liquid.
Layer the Fruit:
Spread half of the berries and raisins (if using) evenly across the bottom of the prepared baking dish. Pour the oatmeal mixture over the fruit. Then, top with the remaining berries and any extra nuts or seeds.
Bake:
Place the dish in the preheated oven and bake for 35-40 minutes, or until the oatmeal is golden on top and set in the center. You can check for doneness by inserting a knife into the center—if it comes out clean, it’s done.
Cool and Serve:
Let the baked oatmeal cool for 5-10 minutes before slicing and serving. You can enjoy it warm or at room temperature. For extra sweetness, drizzle a little more maple syrup on top or add a dollop of yogurt.
Storage:
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat individual servings in the microwave or oven.
