Ingredients

For the Filling:

  • 4 cups sliced peaches (fresh or canned and drained)
  • 1/2 cup water (only if using fresh peaches)
  • 1 cup granulated sugar

For the Batter:

  • 1 cup white sugar
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract (optional)
  • Ground cinnamon (optional, for sprinkling on top)

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C).
  • Prepare the Peaches:
    • If using fresh peaches: In a saucepan, combine the sliced peaches, 1/2 cup water, and 1 cup of granulated sugar. Bring to a boil, then simmer for about 10 minutes. Remove from heat.
    • If using canned peaches: Drain the peaches and skip the water. Combine with the sugar and simmer for 10 minutes.
  • Prepare the Batter:
    • In a mixing bowl, combine 1 cup white sugar, 1 cup all-purpose flour, 1 tablespoon baking powder, and 1/4 teaspoon salt. Mix well.

    • Slowly stir in 1 cup milk to avoid lumps, then add the melted butter and vanilla extract (if using). Mix until well combined.
  • Assemble the Cobbler:
    • Pour the batter into a 9-by-13-inch baking dish. Do not stir.
    • Spoon the hot peach mixture evenly over the batter. Again, do not stir. The batter will rise to the top and form a delicious crust as it bakes.
  • Bake:
    • Sprinkle ground cinnamon on top if desired.

    • Bake in the preheated oven for 40 to 45 minutes, or until the top is bubbly and golden brown.
  • Serve:
    • Let the cobbler cool slightly before serving.
    • Enjoy warm, topped with whipped cream or vanilla ice cream if desired.

Tips

  • For added flavor, consider adding 1 teaspoon of lemon juice and a pinch of nutmeg to the peach mixture.
  • Adjust the sugar in the filling based on the sweetness of your peaches.
  • This cobbler can be made ahead of time and served warm or at room temperature, making it perfect for gatherings.

Enjoy your delightful old-fashioned peach cobbler!
