Old-Fashioned Oven-Baked Peach Cobbler

Ingredients
For the Filling:
- 4 cups sliced peaches (fresh or canned and drained)
- 1/2 cup water (only if using fresh peaches)
- 1 cup granulated sugar
For the Batter:
- 1 cup white sugar
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 cup milk
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 1 teaspoon vanilla extract (optional)
- Ground cinnamon (optional, for sprinkling on top)
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C).
- Prepare the Peaches:
- If using fresh peaches: In a saucepan, combine the sliced peaches, 1/2 cup water, and 1 cup of granulated sugar. Bring to a boil, then simmer for about 10 minutes. Remove from heat.
- If using canned peaches: Drain the peaches and skip the water. Combine with the sugar and simmer for 10 minutes.
- Prepare the Batter:
- In a mixing bowl, combine 1 cup white sugar, 1 cup all-purpose flour, 1 tablespoon baking powder, and 1/4 teaspoon salt. Mix well.
- Slowly stir in 1 cup milk to avoid lumps, then add the melted butter and vanilla extract (if using). Mix until well combined.
- Assemble the Cobbler:
- Pour the batter into a 9-by-13-inch baking dish. Do not stir.
- Spoon the hot peach mixture evenly over the batter. Again, do not stir. The batter will rise to the top and form a delicious crust as it bakes.
- Bake:
- Sprinkle ground cinnamon on top if desired.
- Bake in the preheated oven for 40 to 45 minutes, or until the top is bubbly and golden brown.
- Serve:
- Let the cobbler cool slightly before serving.
- Enjoy warm, topped with whipped cream or vanilla ice cream if desired.
