Ingredients:
- 1 lb ground beef (you can also use ground turkey or chicken)

- 1 large egg
- 1 small onion, finely chopped

Instructions:
- Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, ketchup, egg, chopped onion, garlic powder, oregano, salt, and pepper. Use your hands or a spoon to mix everything together until well combined.
- Divide the meat mixture evenly among the 12 muffin cups, pressing the mixture down slightly into each cup.
- Brush the tops of each mini meatloaf muffin with a little extra ketchup.
