What You Need:
One little onion, minced
minced garlic, 2 cloves
1 little cabbage head, shred
a trio of big eggs
2-Tbsp drizzled olive oil
Toss with salt and pepper.
Extra not included: a quarter cup of shredded cheese and one spoonful of soy sauce

Get All of the Ingredients Ready: In a food processor, mince the onion and shred the cabbage. Smash the garlic.
In a large pan, heat the olive oil over medium heat. Sauté the vegetables. After two or three minutes, add the chopped onion and continue cooking until it softens. Sauté the garlic for one more minute, or until it begins to release its aroma.
Shred the cabbage and toss it into the pan to cook. After around five to seven minutes of cooking, with tossing every so often, the cabbage should be soft and have a mild caramelization. Taste and add salt and pepper as needed. Stir in the soy sauce if using.
Step 3: Crack the eggs into a basin and give them a little beat to incorporate them. Remove the cabbage mixture from the pan by pushing it to one side. Transfer the beaten eggs to the skillet’s empty side. Stir the eggs lightly to scramble them and let them simmer for about one to two minutes.
After the eggs are done cooking, combine them with the cabbage and finish cooking. Toss in some grated cheese and let aside to melt if you want.
Before serving, check the seasoning with a taste. Warm and enjoy by itself or accompanied with some crusty bread.
