Cheesy Potato Bites with Bacon and Herbs

Ingredients:

  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 4 strips of bacon, cooked and crumbled
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped chives
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  • Boil the Potatoes:
    • Place the diced potatoes in a large pot of salted water.
    • Bring to a boil and cook until the potatoes are tender, about 10-15 minutes.
    • Drain and mash the potatoes until smooth.
  • Mix Ingredients:
    • In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, crumbled bacon, parsley, chives, and minced garlic.
    • Mix until well combined.
    • Season with salt and pepper to taste.
  • Shape the Bites:
    • Take a small amount of the potato mixture and shape it into a ball (about the size of a golf ball).
    • Flatten it slightly to form a bite-sized patty.
    • Repeat with the remaining mixture.
  • Prepare for Frying:
    • Place the flour in a shallow dish.
    • Place the beaten egg in another shallow dish.
    • Place the breadcrumbs in a third shallow dish.
    • Dredge each potato bite first in the flour, then dip in the beaten egg, and finally coat with breadcrumbs.
  • Fry the Bites:
    • Heat oil in a large skillet over medium-high heat.
    • Fry the potato bites in batches until golden brown and crispy, about 2-3 minutes per side.
    • Transfer to a paper towel-lined plate to drain excess oil.
  • Serve:
    • Serve the cheesy potato bites warm, garnished with extra parsley and chives if desired.
    • Enjoy with your favorite dipping sauce, such as sour cream or ranch dressing.
