You can put butter on or put it in just about anything; it’s that flexible! We chose to make monkey butter, which is a little different from regular butter but adds taste and creaminess and is really great! Let us fill you in on the deliciousness of monkey butter in case you’ve never heard of it or tasted it. This tropical, fruity mixture is loaded with bananas, pineapple, and coconut, and it goes well over a wide variety of foods.

What is needed

1 can (20 oz.) of pineapple chunks with all of the juices

1 and 3/4 cups of white sugar

three to four ripe bananas, thinly sliced

1/3 cup of coconut

one-fourth cup vinegar

Toppings for serving: ice cream or toast

GETTING READY

Bring a large saucepan or Dutch oven filled with sliced bananas, pineapple (and its juices), sugar, coconut, and lemon juice to a boil over medium-high heat.

Turn the heat down to medium-low and simmer, stirring often, until the mixture thickens and shrinks. Sliced bananas will crumble into little bits.

Take the mixture off the heat and pour it into glass jars when it forms a coating on the back of a spoon. Once cooled, transfer to the fridge and keep until needed.
