2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter unsalted, softened
1 cup granulated sugar
1 large Egg
2 teaspoons pure vanilla extract
1/2 cup white chocolate chips
1/2 cup toasted almonds (optional)
3/4 cup raspberry jam
For the streusel topping:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup unsalted butter, cold and cubed
Instructions:
Preheat your oven to 375°F (190°C). Line a baking tray with baking paper.
In a small bowl, whisk together 2 cups flour, baking powder, and salt.
In a larger bowl, beat the softened butter and 1 cup sugar until smooth. Stir in egg and vanilla extract.Gradually add the dry ingredients to the wet mixture. Add the white chocolate chips and almonds.
