Buttermilk Cake

INGREDIENTS:

•1 3/4 cup sugar
•1 stick unsalted butter (1/2 cup) temp.
•3 eggs
•1/4 tsp. Vanilla extract
•Pinch of salt
•3 t.All-purpose flour
•1 tablespoon buttermilk
•1 9″ pie crust, unbaked

PREPARATION:

Mix the sugar and butter well. Stir in the eggs one at a time until the mixture is nice and smooth. Add vanilla, salt and flour. Stir in the buttermilk and mix well. Place the pie crust on a foil-lined baking sheet (catch any excess).Fill the pie crust to the top of the pie with the buttermilk mixture. Pour the rest into an ungreased pudding cup. Bake at 300 degrees for about 1 hour and 10 minutes. Also, when you remove it from the oven, let it rest until almost cool before serving. Store covered in the refrigerator
