Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped pecans
- Additional powdered sugar for rolling
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cream Butter: In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
- Add Vanilla: Mix in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this dry mixture to the butter mixture and mix until well combined.
- Add Pecans: Gently fold in the finely chopped pecans. The dough will be slightly crumbly, but it should hold together when you squeeze it.
- Form Dough Balls: Shape the dough into 1-inch balls (or your desired size) and place them on an ungreased baking sheet.
- Bake: Bake in the preheated oven for about 12-15 minutes, or until the cookies are set but not browned.
- Roll in Powdered Sugar: Remove the cookies from the oven and let them cool slightly. While they are still warm, roll them in powdered sugar until well coated. Place them on a wire rack to cool completely.
- Second Coating: Once the cookies have cooled, roll them in powdered sugar once more for an extra coating. This gives them that “snowball” appearance.
